This is one of my favorite pasta dishes-and also one of the easiest. The ravioli are pre-made which makes this meal come together quickly, but it tastes like a special occasion thanks to a creamy parmesan basil sauce with zesty cherry tomatoes. Let’s make it! For nostalgia’s sake (this blog was the first blog I ever created and I started it when my son was only about 6 months old. He is now almost 8!) I left the original pictures intact in this post.

OK, OK. Let’s Cook!
For this recipe You will need:
Good quality pre-made spinach ravioli
1 pint cherry tomatoes, halved
10-12 leaves of fresh basil, chiffonade (roll lengthwise, then chop)
1 TBSP minced garlic
1/2C heavy cream
1/2C half and half
1/2C grated Parmesan cheese, plus additional for serving
salt and pepper (I always cook with kosher salt. It is more mild than table salt and much better for cooking)
pinch red pepper flakes
olive oil for sautéing

Start by getting your ravioli going in a pot of heartily salted water and cook them according to package directions. Drain, and set aside, reserving a bit of pasta water to loosen your sauce later if you need to. In this recipe I used Caferrata Spinach ravioli . They are very close in taste and texture to homemade (sorry, nonna).
Now, prepare your holy trinity of garlic, tomatoes, and basil
heat a pan coated in oil to medium, add your tomatoes, salt, and pinch of red pepper flakes
stir everything around until the tomatoes start to release their juices. Take a masher and press a little on the tomatoes to help them along.
add in your garlic stir until the garlic becomes fragrant
plate and serve with a sprig of fresh basil, a sprinkle of fresh parsley and additional cheese, if desired (of course You desire it).
So easy, Right? And soooo delicious.
